Journey in exclusive company on a privately chartered aircraft exploring some of the regional highlights of New South Wales. Discover the raw landscapes and rich mining history of Lightning Ridge, before spending the night positioned right beside a stunning savannah, home to giraffes, rhinos, zebra and antelope. Soak up uninterrupted ocean views of the spectacular Pacific Ocean and embark on a boat trip to view playful bottlenose dolphins before experiencing a ‘Produce to Plate’ farm garden tour with lunch, and a private viewing at the Van Rensburg Gallery. You’ll then continue on to the famous Hunter Valley where you’ll revel in the myriad flavours of some of the world’s finest wines accompanied by sumptuous culinary delights. You’ll bed down in a safari tented camp, seaside resort and vineyard estate. This unique air safari is a grand tribute to the rich diversity of New South Wales.

Journey Itinerary

Day 1: Bankstown – Arrive Lightning Ridge – Dubbo

Depart from Bankstown Airport by private aircraft to Lightning Ridge; famed for its rare black opal, mining history and colourful markets.

You will be met on arrival by a local guide who will introduce you to the attractions of Lightning Ridge, and the surrounding Opal Fields.

Meet with locals, hear entertaining commentary, colourful stories and gain insights into the historic importance of opal mining in the area. Get a first-hand experience into the day-to-day life of opal miners on a guided tour of the Walk-In Mine, the most easily accessed mine in Lightning Ridge. Drive by Amigos Castle and learn the history of this landmark built by one man out of ironstone. Visit Lunatic Hill, the largest open cut mine in the area, and the scenic 3-Mile Opal Fields. Travel past heritage miners camps, such as Fred Bodel’s and Gemseekers Paradise. Enjoy an opal cutting demonstration by an award-winning opal cutter followed by a light lunch at the Bowlo Cafe, a local favourite.

Re-join your aircraft and fly just 40 minutes to Dubbo, where you will be met and transferred to your overnight accommodation, Zoofari Lodge offering an unrivalled in-zoo safari experience.

Once you’re settled into your animal view room, enjoy time at leisure to explore your lodge and surrounds. Later, learn all about the animals’ history and habitats, and their future in the wild. Thanks to the knowledge of your guide, you’ll also get to know the animals’ individual personalities with all their quirks and foibles. Afterwards, return to the Guest House to enjoy an African‐inspired welcome dinner.

Day 2: Dubbo – Moryua – Mollymook

You can set your alarm or just rely on the Zoo’s wildlife alarm to wake you in the morning. Following a leisurely breakfast, transfer by private vehicle back to the Dubbo Airport and re-join your aircraft for your flight to Moryua with a flying time of one hour.

Upon arrival you will be met by your local knowledgeable driver guide, and transfer to Bannisters by the Sea with a stop at a spectacular beach location, where you will enjoy a gourmet grazing box lunch accompanied with local boutique wine.

Bannisters by the Sea is a picture-perfect coastal retreat with uninterrupted ocean views of the spectacular Pacific Ocean.

Tonight enjoy dinner in Rick Steins Private Dining Room, perched high up on a breathtaking sweep of south coast headland.

Day 3: Mollymook

Begin your day embarking on a spectacular guided experience, the rare opportunity of witnessing the majestic beauty of the Bottlenose Dolphin set against rugged cliffs and ancient sea caves on Jervis Bay Peninsula.

Continue on to Milk Haus for an exclusive ‘Produce to Plate’ farm garden tour. Explore the beloved gardens before a sumptuous lunch out in the enchanting courtyard, or inside by the fireplace. Enjoy beautiful dishes made with love from ingredients that have been freshly picked from the farm that day, and locally sourced from like-minded local farmers, fishermen, artisans and home gardeners.

Finish your day with a visit to the stunning Van Rensburg Gallery. Glass of bubbly in hand, you will be joined by the gallerist, Beulah Van Rensburg who will provide a showcase of highly acclaimed local, Australian and International artists.

Dinner tonight will be in the Main Restaurant at Bannisters by the Sea.

Day 4: Mollymook – Moryua – Cessnock

This morning you will be transferred to Moryua Airport for your flight to Cessnock with a flying time of approximately 50 minutes.

Upon arrival you will be met by a local driver guide who will accompany you on a journey through one of the world’s great wine regions, stopping at specially selected wineries and attractions for you to experience the best of the Wine Country.

Your first stop is Peterson House, often referred to as ‘the gateway to the Hunter Valley’, offering over 40 different sparkling wine varieties. Lunch will be at the award-winning Restaurant Cuvee, located within the beautiful sandstone walls of Peterson House featuring exposed aged timber trusses and spectacular views overlooking the stunning vineyards.

Afterwards, continue your exploration of some of the finest wineries in the region, including Scarborough Wines, one of the most recognised Hunter Valley wineries with an exceptional cellar door experience, and Bimbadgen Estate, situated in a commanding position with magnificent views to the Barrington ranges.

Late this afternoon, you will arrive at your accommodation at the luxuriously appointed Spicers Vineyards Estate set amongst rolling vineyards and native bushland.

Tonight enjoy an Avido share style dinner at e’Remo Restaurant, with a 4-course chef’s selection of classically Italian inspired dishes.

Day 5: Hunter Valley

Today, enjoy a guided experience of sipping, swirling and savouring the day as you visit some of the finest wineries in the region, set among a backdrop of rolling hills of vines and the Brokenback Range. Visit De Iullis Wines, and Brokenwood Wines with the opportunity to sample Varietal and Single Vineyard wines.

Lunch will be at the award-winning Baumé Restaurant, where the best of local ingredients are sourced and prepared for an unforgettable gastronomic experience paired with exceptional wines.

Finish up at the famous Hope Estate with a paddle of four varieties from the on-tap range set within their spectacular grounds before returning to to your accommodation.

Tonight enjoy a 3 course modern Australian inspired farewell dinner at restaurant Botanica.

Day 6: Cessnock – Depart Bankstown

Your adventure comes to an end as you transfer to the Cessnock Airport for your return flight back to Bankstown. Flying time is 20 minutes.
